Author Description

黄兆胜，男，1953年9月生，医学博士，现任广州中医药大学教授、博士生导师，国家中医药管理局局级重点学科中药学（中药制药）重点学科学术带头人，历任广州中医药大学中药学院院长、继续教育学院院长、护理学院院长。兼任中华中医药学会第三届全国理事、中国药学会第二十一届全国理事、国家自然科学基金评审专家、国务院学位委员会中药学科组成员、广东省中医药学会中药专业委员会主任委员、广东省食品学会副理事长、广东省保健（功能）食品学会会长及广东省中医药科技专家委员会中药学科组成员，荣获中华人民共和国人事部、卫生部、国家中医药管理局联合颁发的全国名老中医药专家的学术经验继承人证书，享受国务院政府特殊津贴专家，广东省著名中医药专家。多次应邀赴日本、香港等地讲学，并出席国际会议，在国内外具有较高的学术地位和知名度。

黄教授于广州中医药大学研究生毕业后，由国家卫生部公派赴日本国立富山医科药科大学留学多年，学成回国后返回广州中医药大学中药学院任职，长期从事中药的教学、科研和中医临床医疗工作，在中药延缓衰老、抗脂肪肝、抗肝纤维化及中药新药开发研究等方面取得显著业绩，并在中医养生保健、药膳食疗、健康管理等方面有深入研究。近年来负责并完成“脑力宝丸”、“生命力口服液”、“养颜祛斑胶囊”、“御养生源胶囊”等多项中药新药、保健食品的开发研究项目，作为课题负责人主持及完成多项国家级、省部级科研课题，先后在国内外医药学术刊物发表学术论文60多篇，多篇被IM、AA、SCI等国际学术刊物所收载，参加编写出版《汉方诊疗手册》（日文版）、《岭南中草药撮要》《抗衰老药物学》《灵芝的开发应用》《家庭食疗中药学》等学术专著18部，主编全国中医药院校21世纪课程教材《中药学》（获全国医药类优秀教材奖）；主编《中华养生药膳大全》（获中国药膳食疗优秀著作特别奖）。

一、家庭四季靓汤
春季靓汤
春季是万物生发的季节，五脏中肝的活动功能也较为旺盛。因此，春季应少吃酸味食物，多吃甜食，以防肝旺克脾，即“省酸增甘，以养脾气”，后世养生家提出的“春宜甘平”的养生法。性味甘平或有清肝作用的药物和食物有：茯苓、山药、薏苡仁、莲子、胡萝卜、、菠菜、鱼鳔、银耳、木耳、牛乳、枸杞、荠菜、马兰头、芹菜、小白菜、荸荠、菊花等。肝气不旺、气血两虚者，亦可选择黄芪、当归、人参、桂圆、乌骨鸡等进补，以助肝气顺应自然而正常升发。
莲藕牛尾汤
【配方】莲藕600克，牛尾1条（去皮重约900克），陈皮1/4个，红枣8个，姜1片，水和盐各适量。
【制作】①莲藕洗净，去皮洗净。陈皮用清水浸软，刮去瓤洗净。红枣去核洗净。
②牛尾请卖者剥去皮，切件。牛尾放入滚水中煮1 0分钟，捞起洗净。
③水适量放入煲内，放入陈皮煲滚，然后放入牛尾、莲藕、红枣、姜煲滚，慢火煲4小时，下盐调味。
【方解】莲藕生用能清热、凉血、散瘀，熟用能健脾、开胃、益血、生肌、止泻：牛尾补肾壮腰、益髓；红枣补脾胃、益气生津；陈皮理气化痰，和胃。四者合用，共奏补脾养胃、补肾益髓之功效。
【应用】适用于脾肾不足所致的食欲不佳、大便溏薄、脘腹不适、腰膝酸软、面色胱白等症。
灵芝蹄筋汤
【配方】灵芝15克，黄精15克，黄芪18克，猪（或牛）蹄筋100克，水、姜、葱、盐、胡椒粉各适量。
【制作】①灵芝、黄精、黄芪先分别洗净，用水润透，切片，用纱布袋装好扎口。葱、姜拍碎。
②蹄筋放钵中，加水适量，上笼蒸约4小时后，待蹄筋酥软时取出，再用冷水浸漂2小时，剥去外层筋膜，洗净切成长条。
③将蹄筋和药袋放入锅中，加入清水、姜、葱，炖至蹄筋熟烂，拣出药袋、姜、葱。用盐、胡椒粉调味即成。
【方解】灵芝有滋补强壮，扶正固本的作用；黄精能补脾，益精，润肺；黄芪能补气健脾，固表止汗；猪（或牛）蹄筋能益气补中，温胃暖脾。药食合用，共奏补气健脾、扶正固本之功效。
【应用】适用于脾胃气虚所致的体弱乏力、肌肉消瘦、饮食减少、易感冒、易出汗、面色无华等症；也可用于病后体弱的调理。
