两做鱼
常听人说北方人不善食鱼，因为北方河流少，鱼也就不多。我认识一位蒙古贵族，除了糟溜鱼片之外，从不食鱼；清蒸鲥鱼，干烧鲫鱼，他不屑一顾，他生怕骨鲠刺喉。可是亦不尽然。不久以前我请一位广东朋友吃石门鲤鱼，居然谈笑间一根大刺横鲠在喉，喝醋吞馒头都不收效，只好到医院行手术。以后他大概只能吃“滑鱼球”了。我又有一位江西同学，他最会吃鱼，一见鱼脍上桌便不停下箸，来不及剔吐鱼刺，伸出舌头往嘴边一送，便见一根根鱼刺贴在嘴角上，积满一把才用手抹去。可见食鱼之巧拙，与省籍无关，不分南北。
《诗经?陈风》：“岂其食鱼，必河之鲂？”“岂其食鱼，必河之鲤？”“河”就是黄河。鲂味腴美，《本草纲目》说“鲂鱼处处有之”。汉沔固盛产，黄河里也有。鲤鱼就更不必说。跳龙门的就是鲤鱼。冯谖齐人，弹铗叹食无鱼，孟尝君就给他鱼吃，大概就是黄河鲤了。
提起黄河鲤，实在是大大有名。黄河自古时常泛滥，七次改道，为一大灾害，治黄乃成历朝大事。清代置河道总督管理其事，动员人众，斥付巨资，成为大家艳羡的肥缺。从事河工者乃穷极奢侈，饮食一道自然精益求精。于是豫菜乃能于餐馆业中独树一帜。全国各地皆有鱼产，松花江的白鱼、津沽的银鱼、近海的石首鱼、松江之鲈、长江之鲥、江淮之、远洋之鲳……无不佳美，难分轩轾。黄河鲤也不过是其中之一。
豫菜以开封为中心，洛阳亦差堪颉颃。到豫菜馆吃饭，柜上先敬上一碗开口汤，汤清而味美。点菜则少不得黄河鲤。一尺多长的活鱼，欢蹦乱跳，伙计当着客人面前把鱼猛掷触地，活活摔死。鱼的做法很多，我最欣赏清炸酱汁两做，一鱼两吃，十分经济。
清炸鱼说来简单，实则可以考验厨师使油的手艺。使油要懂得沸油、热油、温油的分别。有时候做一道菜，要转变油的温度。炸鱼要用猪油，炸出来色泽好，用菜油则易焦。鱼剖为两面，取其一面，在表面上斜着纵横细切而不切断。入热油炸之，不须裹面糊，可裹芡粉，炸到微黄，鱼肉一块块地裂开，看样子就引人入胜。撒上花椒盐上桌。常见有些他处的餐馆做清炸鱼，鱼的身分是无可奈何的事，只要是活鱼就可以入选了，但是刀法太不讲究，切条切块大小不一，鱼刺亦多横断，最坏的是外面裹了厚厚一层面糊。
两做鱼的另一半酱汁，比较简单，整块的鱼嫩熟之后浇上酱汁即可，唯汁宜稠而不黏，咸而不甜。要撒姜末，不需别的佐料。

这些谈吃的文字，前二十一段刊于《联合报》副刊，以后各段刊于《中华日报》副刊。随便谈谈，既无章法，亦无次序，想到什么就写什么，我不是烹调专家，我只是“天桥的把式——净说不练”。游徙不广，所知有限，所以文字内容自觉十分寒伧。大概天下嘴馋的人不少，文字刊布，随时有人赐教，有一位先生问我：“您为什么对于饮食特有研究？”这一问问得我好生惶恐。我几曾有过研究？我据实回答说：“只因我连续吃了八十多年，没间断。”

人吃，是为了活着；人活着，不是为了吃。所以孟子说：“饮食之人，则人贱之矣，为其养小以失大也。”专恣口腹之欲，因小而失大，所以被人轻视。但是贤者识其大，不贤者识其小，这个“小”不是绝对不可以谈的。只是不要仅仅成为“饮食之人”就好。

《朱子语录》：“问：‘饮食之间，孰为天理，孰为人欲？’曰：‘饮食者，天理也；要求美味，人欲也。学者须是革尽人欲，复尽天理，方始是学。’”我的想法异于是。我以为要求美味固是人欲，然而何曾有背于天理？如果天理不包括美味的要求在内，上天生人，在舌头上为什么要生那么多的味蕾？

偶因怀乡，谈美味以寄兴；聊为快意，过屠门而大嚼。
