Content Description

中国蔬菜供应链体系已基本形成，但与国外发达国家相比，还有待进一步完善，特别是在蔬菜安全、供应链效率等方面与发达国家还存在一定差距。因此，加强对中国蔬菜供应链的研究，提高流通效率、确保蔬菜安全具有重要的现实意义。
本研究运用制度经济学、管理学等相关理论，在实地调研基础之上，采用定性、定量、比较、主成分分析等方法，对蔬菜供应链中的安全和效率问题进行探讨，通过蔬菜供应链结构优化来解决目前蔬菜供应链发展中存在的“瓶颈”问题。

Author Description

杨为民1967年生于山西太谷，籍贯河南太康。管理学博士、北京农学院经济贸易系副教授，研究方向为市场营销及农产品供应链管理。主编或副主编教材4部，公开发表论文20余篇，参加国家自然科学基金和社科基金研究项目各1项，省部级项目5项，主持省部级项目1项。

Book Abstract

目前，蔬菜供应链存在两种基本形式，一种是以农贸市场为供应链终端（直接面向消费者）的蔬菜供应链体系，另一种是以连锁超市为供应链终端的蔬菜供应链体系，这两种模式相得益彰，满足着人们日常生活的蔬菜需求。但同时它们各自也存在着一些弊端，农贸市场较为突出的竞争优势是价格优势，较为突出的劣势在于蔬菜安全性（蔬菜来源及二次污染问题）、污染性（对经营环境的污染）、竞争无序性以及供应商的不稳定性等方面。对于连锁超市来讲，其较为突出的优势在于安全性相对较高（正在建立和逐步完善“蔬菜身份证”的溯源体系）、供应商相对稳定、经营环境较好、信誉度较高、品种较为齐全，竞争劣势突出表现在：价位较高，可能还存在路途较远不甚方便，安全度还未达到令人满意的程度等方面。这些都是从供应链终端所表现出来的一些特点。
消费者所追求的是“物美价廉”，是较高的顾客让渡价值。如何扩大总顾客价值，包括产品价值、服务价值、人员价值、形象价值等；如何降低总顾客成本，包括货币成本、时间成本、体力成本、精力成本等已经成为零售商或批发商日益关注的问题。提高顾客让渡价值其实是一个系统问题，应当说与商品整个供应链条均有一定关系，特别是在产品价值与货币成本方面。对于蔬菜来讲，较为完善的供应链体系可以有效地在保鲜、避免二次污染、降低成本等方面起到较大的作用。因此，蔬菜零售商或批发商之间的竞争，最终会演化为其供应链之间的竞争。
