第九章 农地
前面我已说过，知道土地的性质，了解它适于种什么，不适于种什么，这一点至关重要。“土地”一词可以用在三种意义上面：普通的、本义的或是混合的。作为普通的名词使用时，我们指的是地球上的土地，意大利的土地或其他任何国家的土地，在这样使用的“土地”一词里，包括石头、沙子和诸如此类的其他东西。作为“本义”名词使用的土地一词，是指绝对不需附加任何其他词或条件的土地；而最后，所谓混合意义的土地，是指我们把农业上使用的土地说成是黏土的、多石的等等，因为在这一意义下，有可以用普通名词来表示的那样多种类的土地，这是因为在整体当中包含有各种不同的物质。原来，实际上，在这一意义下的土地，既然它有着不同的力量和潜力，这就说明它是由许多物质组成的，其中我可以列举的有石头、大理石、碎石、沙子、粗沙、黏土、红土、尘土、白垩土、灰、烧土（土地被太阳烤得如此厉害，以致它竟把谷物的根都烧毁）。一般称为“土地”的东西，当它和上述不同物质里的任何一种混到一起时，便根据土地中占主要成分的土壤类型，而称为“白垩土的”、“沙砾的”土地等等。土地的这些类型不同，于是我们也就依照不同的类型把土地分成不同的等级，这些等级又可分成更细的类别，即每一等级至少又可分成三个细类。例如，有一种土地石头很多，一种土地石头不太多，还有一种就几乎完全没有石头。而同样的三种比较的等级，还可用于含有上述其他任何物质的土壤（大理石、碎石、沙子等等）。再者，三个细类中的每一类还可再分成三类，例如每一种都还可分为干燥的、比较干燥的或是潮湿的。而后面所说的这种区分，对于土地上面生长的谷物具有极大的意义。因此，有经验的农夫在比较潮湿的土地上宁可种斯佩耳特小麦，也不种普通小麦，而在干燥的土地上又宁愿种普通小麦，而不种斯佩耳特小麦。在不干不湿的土地上则播种二者当中的随便哪一种。再说，所有这些类别仍然可以进一步细分下去。就拿沙性的土壤作例子吧，沙子是红的还是白的这一点很要紧，因为发白的沙子不适于耕种，相反，发红的沙子却是十分有利于耕种的。我认为不管土地是贫瘠的，是肥沃的，还是介乎二者之间，这三种区别都是重要的，因为肥沃的土地（对农业而言）使许多东西都能丰产，贫瘠的土地则做不到这一点。比如说，在贫瘠的土地上，例如普皮尼亚的土地，人们在任何地方都看不到高大的树木、果实累累的葡萄、茁壮的谷物，在任何地方都看不到马里斯卡的大无花里树；你会发现这里大部分的树木和草地都被晒焦，并且蒙上一层青苔。但另一方面，在肥沃的土地上，如埃特路利亚的土地，你却可以看到每年都播种的、丰产的大田，高大的树木，而任何地方都看不见苔藓。再者，在质量中等的土地上，例如提布尔地区的土地，它越是接近于肥沃而不是贫瘠，它就越是有利于一切谷物，我的意思是说，比之接近于贫瘠的土地会有更好的收成。
