Book Abstract

食品救援具有时间紧、任务重、批量大、距离一般较远的特点。到达灾区后，这项工作还要受到恶劣环境的影响，使得救灾食品的生产、运输、储存、分发过程处于非常状态。救援过程中常常使负责食品生产、运输的企业任务加重，运输工具急需调配，库房不足需设置临时储存场所。因生产任务急迫，检验任务加重，超出了正常运作能力；运输工具因调集面广、用途繁杂、长途运输多次交接等使食品发生意外污染或霉变的几率增大；临时的食品储藏场所选址不当或过于简陋以及食品分发人员缺乏必要的卫生知识等增加了食品的污染机会。运输和分发救援熟食品的车辆往往不是运送食品专用车，缺乏冷链系统和食品卫生保护设施；救援食品包装和容器不洁或损坏；灾区保管暂存救援食品的场所无卫生防护设施，食品易被污染；分发救援食品的人员系临时调用的救灾人员，卫生知识缺乏，个人卫生不良，分发前不能做到洗手消毒，增加对食品的污染几率。
