岁月流逝，健康为何流失
人到了40岁后，身体形态和功能逐渐出现衰老现象；50岁后，人的衰老速度开始加快，随着年龄的增长，人们的生理功能和营养需求也会改变。全面均衡的维生素及矿物质补充，可以减少老年人的疾病，增进健康，延长寿命。
在一项经典的研究中，美国加利福尼亚研究人员观察了近7000名成人，并注意到有些人看起来比实际年龄小，而有些人看起来比实际年龄大。为了找出这种差异的原因，研究人员集中研究了这些成人的健康习惯并确定了影响生理年龄的6项因素。其中，3项与营养相关——饮食有规律、体重控制、戒酒或适量饮酒，其他3项是规律而充足的睡眠、戒烟、经常锻炼。
营养是影响生理年龄的因素之一，合理的营养可以使人健康，看起来更年轻。
美国圣路易斯大学健康科学中心一项调查结果显示，全球86%以上的住院患者及38%的社区老人都处于营养不良的状态。这是调查在16个国家调查后得出的数据。相比年轻人，老人营养不良的后果更严重，如果半年内体重下降5%，老人的死亡率就会上升。生活条件好了，营养不良的情况为何还居高不下？主要是因为中老年人生理功能减弱，导致营养吸收存在障碍。
1．胃肠道功能：老年人的胃液分泌与消化酶的活性降低，使老年人经常发生消化不良的状况，引响铁、钙和维生素B12的吸收。此外，胃肠胀气、恶心与胃痛是由于食用某些高蛋白食物所致，而不吃这些食物，将使营养摄入减少。
2．肾功能：随着年龄增加，肾单位逐渐减少，影响体内废物的排出。
3．口腔的变化：牙齿缺损、牙周炎或不合适的义齿是老人常见的口腔问题。咀嚼困难使老人因避免吃肉食、硬食与粘牙的食品，而营养摄入减少。
4．感觉器官的改变：舌上味蕾消失，使老人失去对甜咸的味觉，抱怨吃的食物又苦又酸；嗅觉减退使很多老人失去享受食物令人愉快的香味；听觉减退使老人不愿意与大家一起进餐，以避免交谈；视觉减退使老人失去食物颜色的刺激，并在夹食物时发生困难。
5．运动功能的变化：老年人体力活动减少，退休后人际交往减少，离群独居，购物烹调兴趣降低，膳食摄入量减少，营养摄入减少。
6．药物的影响：人上了年纪，往往有不少慢性病，需要服用各种药物。很多药物对营养的消化、吸收与利用有影响。如便秘时，服缓泻剂，会影响脂溶性维生素A、维生素D、维生素E、维生素K的吸收，使矿物质如钾、钙、镁、钠的吸收减少；服用激素会使老年人对维生素B6、维生素C和维生素D的需要量增加;服用降血胆固醇的药物会使脂溶性维生素A、维生素D、维生素E、维生素K的吸收不良与维生素B12及叶酸的吸收减少。
