中国人民大学设计艺术学硕士，曾任和讯网、腾讯UED设计师、绘画师，目前负责北京桂荷自在素食会所的日常运营与活动策划，以及业界知名微信公众账户“素食星球”《北京素食地图》的整理和绘制工作，自己经营的自媒体账号“Alina小迪素食簿”，用画笔将素食生活的点滴趣事和心灵感悟画出来，美丽的手绘加上读来静心的文字，为她吸引了上万的粉丝。 2009年开始吃素，几年下来，她从原来经常到医院看医生打点滴的“病秧子”，到今天脸色红润很少生病的气质美女，素食为Alina在身体上和心理上都带来了巨大而积极的改变。她也希望能尽自己的力量使素食成为一种利于更多人群的风尚。

Book Abstract

【土豆泥】简单又美味，做主食或配菜都不错。

食材：土豆、香菇、胡萝卜
辅料：橄榄油、盐、黑胡椒粉、绵白糖、柠檬汁

做法：
1.土豆削皮切块煮软（用筷子戳一戳便知）。
2.捞到碗里用勺子捣碎。
3.少量香菇、胡萝卜切成丁，炒锅热橄榄油，把香菇和胡萝卜丁炒熟。
4.连油一起浇在土豆上，撒适量盐、黑胡椒粉、糖、柠檬汁，边搅拌边用勺子压成泥。

贴士：
>土豆先削皮切块再煮很容易熟软，省火。煮土豆的水可以留着煮粥用。
>胡萝卜也可以换成豌豆，只是要提前浸泡，再跟土豆一起煮熟。

【腐乳空心菜】绝对的一道懒人菜。

食材：空心菜、生姜
辅料：红腐乳
做法：
1.空心菜一把，洗净切段，切一小撮姜末，待用。
2.几小勺腐乳汁，半块腐乳捣烂，混在一个小碗里。
3.炒锅热少许油，空心菜和姜末一起入锅翻炒1分钟（可以先放菜茎再放叶子），随后倒入调好的腐乳汁继续翻炒至空心菜略软入味（尝一下菜茎熟透即可），加点水涮下盛放乳腐汁的碗倒入炒锅，大火收汁。

贴士：
>腐乳汁的咸度已经足够，无须加盐。
>如果不喜欢姜末可以忽略，那就更简单了。

【烤茄子蔬菜卷】

食材：
长茄子、土豆、生菜、芹菜、西红柿、面粉（面饼用）
辅料：
橄榄油、黑胡椒、百里香、盐

做法：
面饼：
1.搅一小团儿面（先放一大勺面在碗里，边添水边搅，直到能和成一个偏软的面团），揉成长条，切三四公分的段，揉圆按扁，擀成薄面饼。
2.蒸锅水开后放第一张面饼，盖锅盖蒸十几秒，再叠放第二张，以此类推。
3.放完最后一张再等3分钟出锅。
4.随后在平底锅里烙一下（无油），至两面都有一些微黄，待用。
土豆和生菜：
1.蒸面饼之前，先把土豆去皮切小块，这样可以在蒸饼的时候把土豆放在蒸锅水里煮（省时省火）；煮熟软后捞出放碗里，加少量盐捣成泥。
2.生菜洗净（可以用小苏打水泡2分钟后再洗净），沥干水分待用。
最重要的茄子：
1. 茄子洗净切掉茄子把纵向切成两半；西红柿、芹菜切碎丁。
2. 茄子放入烤箱，以180度预烤6~7分钟（烤软了，以便做后面的工序），取出后在茄子中间划一刀缝儿，刷一层橄榄油，划开的缝里撒入盐、黑胡椒及少量百里香，再夹入西红柿和芹菜丁。
3. 重新入烤箱再烤10分钟即可。
怎么吃也是要讲的：
面饼铺开，放一大片生菜，抹一层土豆泥，再放上半个烤好的茄子（可以把没用完的芹菜之类的再放几条，根据个人口味可再撒些黑胡椒等），卷好就可以吃了。

【快手凉面】没有凉面和绿豆汤的夏天怎么能叫夏天呢？

食材：面条、黄瓜、绿豆芽
辅料：花椒、麻椒、干红椒、花生、生抽、醋、盐、白糖、芝麻酱
做法：
1.黄瓜洗净切丝，豆芽开水焯熟（放入豆芽后搅拌均匀，水再滚起即可）；花生捣碎；面条煮熟，过冷水待用。
2.炒锅热油炸香花椒、麻椒、干红椒，炸好后把它们都捞出来；再把花生碎放油里炸得微黄。
3.取一小碗放入适量芝麻酱、生抽、醋、盐、白糖，调入刚才炸好的油（连花生碎一起）。
4.拌好的调料浇在面条上，摆上黄瓜丝、豆芽，拌匀就好。

贴士：
吃之前，可以根据自己的喜好再加点香菇酱或者老干妈之类的酱料调味。

【冰糖荷叶绿豆饮】荷叶、绿豆都是夏季解暑的好食材。荷叶能够抑制脂肪的吸收，帮助我们保持好身材；荷叶碱扩张血管、降血压,所含的黄酮类物质还能对心血管起到保护作用。

食材：绿豆、荷叶
辅料：冰糖
做法：
1.绿豆提前1小时冷水浸泡；荷叶洗净剪成大片。
2.煮锅加适量水，倒入绿豆（水与绿豆的量比大约是10:1），放入荷叶和冰糖搅拌均匀，大火烧开后转中火煮到绿豆绽开。
3.捞出荷叶片即可饮用。

贴士：
>用鲜荷叶最好，没有的话也可以买干荷叶。
>传统习惯先以荷叶煮水，再用此水煮粥。这次尝试一起煮，最后再捞出荷叶，效果一样，但更省时省火。
