人生完成之日 ── 修一

毛姆(William Somerset Maugham，1874~1965)是我最喜愛的英國作家，他在六十四歲書寫的回憶錄上說：
「我一向面對著未來而活，因此即使未來變短了，也無法脫離這個習慣。」

他秉持這種想法，活到九十一歲，並在生前如此評論自己的死：
「那是我計畫的人生圖案完成的日子。」
他這一生應該過得很圓滿。

九十歲生日那天，他還說：
「我有時候會問自己，你這一生想不想重來一次。從整體上看來，我這一生過得相當不錯……也許比大多數的人還要好。」說是這麼說，他卻又表示：
「可是重複一次是沒有意義的。就像把看過的推理小說又拿出來看一次，只會覺得無聊。」

毛姆享年九十一歲。一派從容自在，令人景仰。我也有同樣的想法。

雖然看不見 ── 英子

由於他走得過於突然，到現在還不覺得他已經不在人世了。

屋裡到處都有他留下來尚未完成的東西，每次看到都會感覺到孩子爸的存在。

每個人都問我：「會不會寂寞？」我不覺得寂寞。也不太會感到悲傷。

總覺得他似乎還在這裡。那個人能待的地方不是只有這裡嗎？至死之前，我同樣沒其他地方可去。女兒也說，爸爸沒有其他去處，因此會覺得他一直在這裡遊蕩。

女兒為我擔心，經常從東京回來探望，我告訴她：「妳要上班，也有家庭要顧，交通費又不便宜，不需要這麼常回來，我沒事的。」可是她說待在東京時，晚上會想東想西的，眼淚就掉下來了，而回來這裡可以什麼都不想，安心睡覺，所以會想回到這裡。

雖然沒有任何跡象，我和女兒卻都覺得孩子的爸還在這裡。

怕寂寞的人 ── 英子

孩子的爸是怕寂寞的人，一有心事就會睡不著，而影響到旁邊的我。「孩子的爸，睡不著嗎？我來牽你的手，趕快睡吧。」從旁握住他的手，他就會漸漸發出鼻息。

乘帆船出海時，一次只能睡兩個小時，因此他隨時隨地都能立刻睡著。可是有煩惱的時候，他就會睡不著。這時就要跟他說：「我們聊一聊好了，我會牽你的手。」總之要讓他安心。不過他在別人面前，完全不會顯露這一面。

自從他的健康發生問題，我就開始獨自一人去名古屋購物。「孩子的媽，你要小心喔。」他的操心超乎尋常。我不在家時，他可能就會憂心忡忡，不知如何是好。看到我平安回來，就會說：「啊，太好了！」這才放下心中的大石，津津有味地吃著我帶回來的握壽司。現在想一想，我的角色不是妻子，而是母親……

關於高湯 ── 英子

自從開始減鹽，我的高湯用量越來越大，因為要用高湯來增加風味，盡量不使用調味料。

我們家不只是柴魚、昆布，也經常用干貝、雞翅、蝦頭來做高湯。

以前會從沖繩訂購柴魚，由修一用刨子削成薄片才拿來用。削片雖然麻煩，但勞心費力可以增加風味，他本人也樂在其中。現在的用量太大，用削的太慢，已經換成伊勢神宮也在用的稱為「波切節」的產品，削好的柴魚片裝在真空包中。據說波切節的歷史比柴魚片的名稱還悠久。

至於昆布，我用的是福井市奧井海生堂的產品。以前不小心買到送禮用的，價錢很高，但味道完全不同，這才發覺差別竟然那麼大。店員說這種東西跟紅酒一樣，經過熟成，味道會更好。據說靜置三年後，變化會更明顯。

聽說柴魚也是一樣，靜置一陣子，讓脂肪分解，就會產生清澈的味道，也因此有「枯柴魚」的稱呼。
