叉叉每日食谱——绿豆冰糕(原味及红豆馅)
好吃又好做的绿豆糕哟~ 可以伪装成月饼的绿豆糕哟~中秋快来了 自己在家里也可以试一试哟😝挺简单的
发了朋友圈大家分分以为是月饼所以打了中秋就要吃月饼的tag 谁说中秋不能吃绿豆饼啦!!!🙈
飓风要来学校放假了 每天在家里无聊 去年买的一袋去皮绿豆还没有开封过 所以昨天打算做绿豆糕
其实我很小的时候就有个疑惑 为什么绿豆糕是黄色的 去年我终于有了答案 因为它是用去皮绿豆做的🌚 那么 绿豆糕是怎么做出来的呢 其实过程很简单
先把去皮绿豆200g加水揉搓到水不再浑浊后泡水过夜 我同时泡了红豆 因为昨天半夜做了双皮奶 蜜红豆是标配~
泡过一夜水之后感觉红豆和绿豆都膨大了😆吸收足了水分
然后把红豆绿豆加水倒入锅中 大火烧开煮20分钟
因为我想要绿豆比较好碾碎所以后来我又加了点水加盖小火煮了20分钟左右 红豆同理(想做软糯糯的红豆汤) 红豆中加入大概30g糖 因为绿豆糕的馅没有想做太甜
觉得差不多后开大火把水分蒸干 然后拿刮刀/勺子开始碾压绿豆 把它们都碾碎 这是考验臂力的第一环
如果想要很细腻的口感 那就过筛吧 开始还比较容易后面越来越难 拿着刮刀在筛子里使劲刮刮刮 感觉比举铁还累 今天天鹅臂都感觉不用做了🤣 不想累到自己可以选择用榨汁机直接打碎or忽略这一步(关爱自己人人有责)
过滤完之后继续开火用刮刀不断翻拌 觉得差不多不是糊而是略干时加入25g黄油
继续翻拌到绿豆沙充分吸收黄油 觉得不那么糊锅时加入50g奶油和50g糖 糖的量可以依照个人喜好 可以边加边尝味道 调到自己喜欢的甜度~
然后继续翻拌
等到整坨绿豆蓉都变得完全不粘锅并且微微干的时候就可以出锅啦
同时红豆也差不多煮好了 我舀了一些出来放入保鲜袋碾碎 然后搓成了个球↓↓↓ 打算用来做馅 剩下的红豆盛一部分出来做红豆汤 再剩下的部分继续加糖煮到水干做蜜红豆
然后开始按印花啦~~~最有趣的步骤
还是和冰皮月饼同款模具 这两天它都快C位出道了…
同时也要准备糕粉…毕竟怕黏模具
说实话第一个玫瑰花图案的就黏住了🤣于是我乖乖去烤了糕粉 糯米粉装盘微波炉叮三分钟
每做一个新的都要在模具内部撒一遍粉 不然肯定得黏住 玫瑰花图案的gg了好多次
撒粉之后把粉倒出来 揪一团25g绿豆蓉 然后一按一个准 爽快!!!ꉂ೭(˵¯̴͒ꇴ¯̴͒˵)౨”
也可以20g绿豆蓉+5g红豆馅 做成有夹心的 下图中间颜色深的或者表面有点颜色的就是红豆馅的啦😆
因为过滤完还剩一坨绿豆渣渣并没有全部用到 所以绿豆蓉的量没有很多 总共做了十四个 封面图就是全部啦
甜度刚刚好 一点都不腻~ 室友说有馅的不够甜 因为我没想做太甜馅 不然就甜+甜→腻了🤣
发了朋友圈之后学长学姐闻讯前来瓜分 学长还给我带了月饼哈哈哈 之后写测评
最后只剩下四个啦
剩下的绿豆渣渣加糖加水煮一煮 成了一碗绿豆汤 扔进冰箱里啦
