上海人真的很少吃芽菜诶!!但是很想试试看就做了下碎米芽菜
鸡腿肉四根去骨切小小丁;
白砂糖半茶匙,白胡椒粉1小搓;
宜宾碎米芽菜半包;
泡椒几颗,切碎备用;
蒜瓣2、3瓣,切碎备用,老姜2、3片,切姜末;
盐半茶匙,白砂糖半茶匙,老抽大半瓷勺,醪糟汁1瓷勺;
现成的黄飞红花生一把。
半包芽菜提前放到凉水里浸泡5、6分钟,目的是泡掉多余的盐分,然后捞出来尽量沥干
把沥干水的芽菜末、醪糟汁、切碎的泡椒、姜蒜末、盐、糖、老抽全部兑到一个碗里。
炒锅里加两瓷勺油,中火烧热之后把鸡胸肉碎炒散,炒到发白的状态,基本7、8成熟。
把刚刚兑好的调料一股脑儿都入锅,炒匀。
鸡肉炒到9分熟的时候,再倒入切碎的花生碎。
