秋冬天吃份甜滋滋的甜甜圈 | 日本網紅甜甜
這個配方是在網路上找來的,
大部分食譜都大同小異有加入糯米粉,
因此在製作時很黏手也不好放入油中,
在炸時也要很小心控制火的大小才不會一下炸的太快而焦黃,
做出來挺好吃的但總缺乏追求的空氣輕盈感,
可能下次考慮用酵母配方製作。
另外我要吹爆亞米上面買到的嘉禾牌麵粉,
當初在亞米看到時無比驚喜!
由於嘉禾的麵粉保存期限短又價位偏高,
因此不常常在超市見到,嘉禾牌麵粉無比細緻光滑,
做什麼都讓做出的食物口感更上一層樓,
也難怪為鼎泰豐的御用麵粉
麻糬甜甜圈食譜
1第一步驟把以下粉類過篩備用
1 cup all-purpose flour (minus 1 tablespoon) 130 g
1 tablespoon corn starch 10g
3/4 cup glutinous rice flour 87g
1 tsp baking powder 4g
1/2 cup granulated sugar 100g
豆腐徹底攪碎均匀,加入蛋與水後再次攪拌
3.5 oz silken tofu
1 egg
2 tbsp water
3)把豆腐蛋液與粉徹底混合均勻後,分成7g的麵糰滾
圓,用八個圓球組成一個甜甜圈,這個配方約可做八個甜

4)起油鍋放入油後開中小火加熱,放入甜甜圈炸至兩面
金黃色
5 由於不喜歡吃太甜,上面的裝飾為糖霜與粉紅巧克力
